Cream Of Tomato Soup

1 liter vegetable stock
800gms red tomato
100gms carrot
80gms red onion
10gms garlic
2ml olive oil
10gms basil
300gms whole spelt bread, diced into medium-sized croutons
200gms broccolini
5ml acacia honey
100gms yellow cherry tomatoes


 


Procedure

Cook red tomatoes, garlic, onion, carrot and oil in the vegetable stock.
Blend and strain.
Season with salt and a little honey
Cut the yellow cherry tomatoes into cubes and add to the soup.
Garnish the short braised broccolini, basil and croutons.
